Here's how to calculate the real margin on all coffee variations step-by-step.

All costs of a coffee drink

A cappuccino isn't just coffee and milk. For a correct margin calculation, you add up all ingredients and costs:

  • Coffee beans (per espresso shot)
  • Milk (for foam and hot milk)
  • Flavorings (syrup, cocoa, cinnamon)
  • Packaging (for takeaway: cup, lid, stirrer)
  • Extra preparation time vs. regular coffee

For one cappuccino (250ml):

  • Coffee beans (18g): €0.32
  • Milk (150ml): €0.18
  • Cocoa powder: €0.03
  • Takeaway cup + lid: €0.15

Total cost price: €0.68

VAT and selling price calculation

Coffee in a café falls under 9% VAT (consumption on premises). For margin calculation, you always work with the price excluding VAT.

Milk costs per coffee variant

Different coffee drinks use different amounts of milk. This significantly affects your cost price and margin:

  • Espresso: 0ml milk
  • Macchiato: 20ml milk foam
  • Cappuccino: 150ml milk (1/3 espresso, 2/3 milk/foam)
  • Latte: 200ml milk
  • Flat white: 160ml milk (less foam)
