Your beverage costs could be silently draining profits from every drink you pour. Beverage cost reveals the percentage of drink revenue spent on purchasing alcohol, coffee, and other beverages. Most profitable bars maintain this between 18% and 25%.
What exactly is beverage cost?
Beverage cost (also called 'pour cost') reveals what percentage of drink sales goes toward purchasing alcohol, soft drinks, coffee and other beverages. It mirrors food cost calculations, but focuses exclusively on your bar operations.
💡 Example:
You sell a glass of wine for €6.50 (incl. 21% VAT):
- Sales price excl. VAT: €6.50 / 1.21 = €5.37
- Purchase price wine per glass: €1.20
Beverage cost: (€1.20 / €5.37) × 100 = 22.3%
The formula for beverage cost
The calculation's straightforward, but VAT requires careful attention:
Beverage cost % = (Drink purchase costs / Sales price excl. VAT) × 100
⚠️ Note:
Alcoholic beverages carry 21% VAT, not 9% like food. Always calculate using the price excluding VAT for accurate beverage cost.
Benchmark percentages by drink type
Different beverages target different cost percentages:
- Beer: 20-28% (varies by draft vs. bottle)
- Wine: 25-35% (per glass), 18-25% (whole bottle)
- Spirits/cocktails: 15-22%
- Soft drinks: 15-25%
- Coffee: 10-18%
Calculating beverage cost for cocktails
Mixed drinks require adding every ingredient: spirits, mixers, garnish, ice and even straws.
💡 Example cocktail:
Mojito for €9.50 (incl. 21% VAT) = €7.85 excl. VAT:
- Rum (5cl): €0.85
- Lime juice: €0.15
- Sugar syrup: €0.08
- Mint + ice: €0.12
Total purchase: €1.20 → Beverage cost: 15.3%
Total beverage cost for your bar
For your entire bar operation, calculate total beverage cost over specific periods (weekly/monthly):
Total beverage cost % = (Total drink purchases / Total drink revenue excl. VAT) × 100
💡 Example monthly figures:
- Drink revenue March: €15,000 incl. VAT = €12,397 excl. VAT
- Drink purchases March: €2,850
Beverage cost: (€2,850 / €12,397) × 100 = 23%
Where things often go wrong
After managing kitchen operations for nearly a decade, I've seen bars lose money through these common mistakes:
- Pouring too generously: 25cl beer instead of 20cl costs you 25% extra
- Free drinks: friends, staff, 'samples' don't count toward revenue
- Spillage and waste: incorrectly poured beers, old wine
- Theft: staff or guests drinking for free
⚠️ Note:
A beverage cost above 30% often means more is being given away than sold. Check your portioning and procedures.
Improving beverage cost
If your beverage cost runs too high, try this approach:
- Measure your portions: use jiggers for spirits, check tap settings
- Check your prices: are they still current after supplier price increases?
- Analyze by product: which drinks have excessive beverage cost?
- Train your staff: consistent portioning saves hundreds of euros monthly
Systems like KitchenNmbrs can calculate beverage cost per drink and track which products generate maximum profit.
How to calculate beverage cost? (step by step)
Gather all purchase prices of your drinks
Note the purchase price per bottle, per liter or per package of all your drinks. For beer: price per liter. For wine: price per bottle. For spirits: price per bottle and calculate the price per shot (usually 4-5cl).
Calculate the purchase price per portion
Divide the purchase price by the number of portions you get from one package. A bottle of wine (75cl) yields 5 glasses of 15cl. A bottle of gin (70cl) yields 14 shots of 5cl. For cocktails, add up all ingredients.
Calculate the beverage cost percentage
Use the formula: (Purchase price per portion / Sales price excl. VAT) × 100. Note: alcoholic beverages have 21% VAT. A drink of €6.00 incl. VAT is €4.96 excl. VAT.

Frequently asked questions
What is a good beverage cost for my bar?
Most bars maintain healthy beverage costs between 18% and 25%. Cocktail bars often achieve lower percentages (15-20%), while wine cafés sometimes run higher (25-30%). Your concept and pricing strategy determine the ideal range.
Should I include VAT in my beverage cost calculation?
No, always calculate using sales prices excluding VAT. Alcoholic beverages carry 21% VAT in the Netherlands. A beer priced at €3.00 including VAT equals €2.48 excluding VAT for your calculation.
Why is my beverage cost higher than expected?
Common causes include oversized portions, complimentary drinks for friends or staff, spillage, theft, or outdated sales prices after supplier increases. Start by checking your portioning accuracy first.
