During a first inspection, you usually get a warning if there are no other acute hazards. With repeated violations, fines can run up to €10,000 or more. In serious cases, your business can be closed.
Can't I just stick with paper lists?
Paper lists can work, but they get lost easily and searching takes a lot of time. During an inspection, you need to quickly prove you took measures. Digital is much more efficient.
How often do I actually need to measure temperatures?
For cooling and freezing at least once per day. When reheating, you must reach and record a core temperature of 75°C. Keeping warm happens above 60°C. The exact frequency depends on your HACCP plan.
